In my humble opinion, purple cabbage is the most beautiful vegetable God ever created. When you chop it up, you can’t help but smile at its dainty curly edges. Eating purple cabbage is an easy way to load up on your vitamins and prevent cancer too, because it is rich in Vitamin C, Vitamin K, and antioxidants. Welcome spring and long for summer with this yummy colorful apple & cabbage slaw! I dare you to find a prettier vegetable.

Sweet & Tangy Apple Cabbage Slaw | from The Fresh Market

¼ C. red wine vinegar
2 T. Dijon mustard
2 T. honey
½ head purple cabbage, thinly sliced or shredded
1 large green apple, thinly sliced
3 green onions, chopped
walnuts (optional)

Combine red wine vinegar, mustard, and honey in a bowl; whisk until blended. Fold in cabbage and apple until well coated, garnish with green onions and walnuts. Cover and refrigerate.

Serves 4-6.

On this spring evening, I paired this slaw with my Pistachio-Crusted Honey Dijon Chicken Tenders, Brussels Sprouts, and a breadstick…nothing spectacular, but still delicious!
