Pumpkin Chocolate Chip Muffins {Recipe}

These are absolutely the easiest muffins I’ve ever made. They are the perfect way to begin a chilly fall band competition day or to take with you on a trip to your favorite fall festival.

And the best part: they have pumpkin, which is full of Vitamin A. Is there a more enjoyable way to improve your vision and protect your body from lung cancer than eating pumpkin muffins? I think not. If that’s not enough to sell you…they also have Ghirardelli dark chocolate chips, which are also high in antioxidants and improve cardiovascular health. Basically, a pumpkin muffin a day keeps the doctor away.

Pumpkin Chocolate Chip Muffins

1 (15 oz.) can pumpkin
1 box spice cake mix (no need to add the oil, eggs, or water…just the cake mix itself)
Dash of cinnamon and pumpkin pie spice
Ghirardelli dark chocolate chips…however many you want

Stir all ingredients together and drop into muffin cups. It should make between 18-20. Bake at 350o for 20 minutes. Voila!
